high-end Japanese dining experience opening soon in the heart of Montclair, New Jersey. We are
seeking a Sushi Chef to lead the sushi program with precision, artistry, and innovation that honors
Japanese tradition while embracing contemporary creativity.
This is a unique opportunity to join the opening team of a prestigious new concept that will set the
standard for elevated Japanese cuisine in the region.
About the Role
As the Sushi Chef at MM by Morimoto, you will be responsible for leading all aspects of the sushi
program. This includes menu development, product sourcing, training and supervision of sushi team
members, maintaining food safety standards, and delivering an exceptional guest experience in line with
Chef Morimotos exacting standards.
You will collaborate closely with the Executive Chef and management team to ensure consistent
excellence in quality, execution, and presentation.
Key Responsibilities
- Lead sushi production with skill in cutting, slicing, and filleting various fish and seafood
- Design and execute sushi menus including nigiri, sashimi, and specialty rolls
- Ensure consistent quality, portioning, and artistic presentation of all sushi dishes
- Oversee ordering and inventory of all sushi-related ingredients and supplies
- Inspect all incoming seafood and produce for optimal quality and freshness
- Maintain impeccable cleanliness and sanitation of the sushi station and tools
- Train, manage, and inspire sushi team members in best practices and techniques
- Collaborate with front-of-house to meet special guest requests and dietary needs
- Maintain communication with the Executive Chef regarding equipment, needs, and
improvements
What Were Looking For
- Proven experience as a Sushi Chef or Senior Sushi Chef in a high-end or Michelin-recognized
Japanese restaurant - Mastery of sushi preparation techniques including maki, nigiri, and sashimi
- A deep understanding of Japanese ingredients, seasonality, and tradition
- Strong leadership and communication skills
- The ability to thrive under pressure in a high-volume, fine-dining environment
- Commitment to maintaining the highest food safety and hygiene standards
- Excellent time management and organizational skills
- Up-to-date ServSafe certification (or equivalent as required by law)
Compensation
$80,000$90,000 annually, based on experience, plus potential performance-based incentives and
benefits.
